Banana Crusted Fillet of Sole on Micro Greens
Ingredients
1 ⁄ 2 cup Panko Bread Crumbs
2 1 ⁄ 2 tbsp. (2/3 ounce) Banana Epicurean Dust
2 whole eggs
2 3-4 ounce Fresh Sole Fillets
1 ⁄ 2 tbsp. Olive oil
1 ⁄ 2 tbsp. Butter
1 cup Baby Greens
Banana Dressing Ingredients
1 3 ⁄ 4 cups plain yogurt
2 1 ⁄ 2 tbsp. (2/3 ounce) Banana
Epicurean Dust1/8 cup honey
1 ⁄ 2 tsp. Vanilla extract
1 ⁄ 4 tsp. Freshly grated ginger
Mix Panko and Banana Epicurean Dust in small bowl.
Beat 2 eggs in a separate bowl.
Pat fresh fillets dry then dip in the egg wash and then in the Panko mixture.
Cook in a hot skillet for 1 minute on each side until light golden brown.
Diagonally slice sole filet and place on a bed of fresh micro greens.
Banana Dressing
Combine all ingredients in bowl.
Place in a nonmetallic container in the refrigerator.
(Can be stored for two days.)
