Banana Crusted Fillet of Sole on Micro Greens

Ingredients

  • 1 ⁄ 2 cup Panko Bread Crumbs

  • 2 1 ⁄ 2 tbsp. (2/3 ounce) Banana Epicurean Dust 

  • 2 whole eggs

  • 2 3-4 ounce Fresh Sole Fillets

  • 1 ⁄ 2 tbsp. Olive oil

  • 1 ⁄ 2 tbsp. Butter

  • 1 cup Baby Greens

Banana Dressing Ingredients

  • 1 3 ⁄ 4 cups plain yogurt

  • 2 1 ⁄ 2 tbsp. (2/3 ounce) Banana
    Epicurean Dust

  • 1/8 cup honey

  • 1 ⁄ 2 tsp. Vanilla extract

  • 1 ⁄ 4 tsp. Freshly grated ginger


  1. Mix Panko and Banana Epicurean Dust in small bowl.

  2. Beat 2 eggs in a separate bowl.

  3. Pat fresh fillets dry then dip in the egg wash and then in the Panko mixture. 

  4. Cook in a hot skillet for 1 minute on each side until light golden brown.

  5. Diagonally slice sole filet and place on a bed of fresh micro greens.

Banana Dressing

  1. Combine all ingredients in bowl.

  2. Place in a nonmetallic container in the refrigerator.
    (Can be stored for two days.)
